I didn't get to cook anything in my smoker last weekend since I got tied up at work, so I'm going to do a quick smoke tonight.
I've had a pork butt curing in the fridge for the past 10 days. I de-boned it, trimmed lots of the fat from the outside, and rubbed it with Buckboard Bacon cure from High Mountain Jerky (http://www.himtnjerky.com).
Tonight I'm going to fire up the smoker, slather the butt with maple syrup and smoke it to 140*. Ought to take about 4 hours with the smoker at 205 or so. Chill it over night to firm up and slice it in the AM for the frying pan...
Can you say bacon and eggs for breakfast? Yum Yum...
