I posted some info about brining in the recipes forum. Unfortunately it was too long for one post. If I didn't post it right, hopefully Sharky will clean it up.

For a quick intro to brining, start with some boneless, skinless chicken breasts. Pick a simple brine from the recipes I have provided, brine them for one hour, then cook them your favorite way. If that little experiment doesn't convince you about the benefits of brining, nothing will.

I brined my turkey for Thanksgiving last year. I used Alton Brown's instructions, it came out great!

A co-worker swears by it so I'll try it sometime in the near future. The problem I have is finding a bird that hasn't been injected.
