Here is a nice simple recipe for cooking lighter fish on the grill without worrying about it falling apart and ending up in the fire.
-Place flounder, tilapia, or your fish of choice on a generous piece of foil
-Add one tablespoon butter, juice from half of a lemon, one teaspoon minced garlic, sprinkle with chopped vidalia onions.
-Make a tent from the foil. Double it using another piece of foil. This prevents the juices from flowing out if you spring a leak from moving it around the grill.
-Poke a few holes in the top with a fork to allow some steam to escape.
-Cook it on the grill on medium flame.
-Take a peak in about 10 minutes. It should take 15 minutes max to cook.
-Lightly drain the fish and sprinkle lightly with paprika.
