I live i Florida, so the weather is always good enough to grill.
How do you guys, up North, cope without grilling while it snows?
Do you trek outside in the snow anyway?
I bbq during the winter but it doesn't get all that cold in new orleans...but sometimes it doesn't.

This was our thanksgiving. Roated a pig in the ground. It was pretty damn cold sitting out there all night but the keg of DosXXX and a fifth of Jack definitely helped out. :-)

It looks like you are spitting lighter fluid into the fire! What is the guy next to the grill doing? lol
I don't think that is very safe!
It looks like you guys had a lot of fun. The fire pit setup you have is pretty cool. Looks like Banana leaves over the top? Are those guys Vietnamese or Philipino by any chance?

Yeah, it's definitely a funny picture!
When I lived in Idaho we weren't able to do any outdoor grilling durring the winter.
At least not at my place.. we had no cover to keep the grill from being
burried by snow.
It's nice living in Florida now and being able to grill year round.

I guess that would be a setback, but a true grilling fanatic would find a way!
When we lived in Idaho (in the early 80's) my dad would keep the Grill in the Garage and only lug it outside when he needed to grill.. (or so I remember, I could just be imagining this!)

Ok, that picture is after we had been cooking all day, that was there just to keep us warm. Oh yea, we're also drunk...by then we finished off a keg of DosXXX. Someone mentioned that coffee creamer was flamable and I didn't believe them but it is. So I turned into a flame thrower. lol
Yes, that was banana leaves. My friends are Vietnamese and they are awesome cooks. I've learned a few things from them.

Bah, I'm from Manitoba Canada and I BBQ rear 'round. You just have to shovel around the BBQ and stay close to it when doing so. Nothing quite like coming in the house to a hot meal after freezing your balls off. :eek:

The worst it gets in SoCal is rain, but my bbq is on a covered patio right outside my condo. Not that a little rain would keep the tri tip in the house...

I used to live in Calabasas & Northridge, CA. I grilled year round there as well. The weather is great there!

You'll notice I'm not a Dictator Moderator. I don't mind you posting external links here like some other boards. I started this forum out of my passion for grilling! I don't claim to be the best, I'm here to learn too. If a link to another board or website will help people, I'm all for it... Just as long as it's relevant!

Although using the smoker is a challenge in the winter, it is well worth it. I have a fire pit close by and a bottle of brandy even closer. :D

My wife would shoot me if I didn't smoke the ribs. I almost have them perfected and she just loves those babybacks.
As soon as the ground dries up I am going to smoke a hind quarter of venison. :mouthwate
I could smoke it anytime but I don't want all of the mud tracked through the house by guests.

How do you prefer your ribs, fall off the bone tender or a little tougher?
I like em when you can pull the ribs apart with your hands, but not so tender they fall off the bones.
I always rub my ribs about 8-24 hours ahead of time. I let them sit in the fridge and marinate in the juices that the rub helps create. Until I started doing this, I always put BBQ sauce on the ribs to help kick up the taste, but now, I wouldn't think of it!
I use a direct/indirect form of grilling.
I put one burner on med-high, and the other on low. I place the ribs on the low side for about 50-60 minutes, flipping maybe once. Once they are a little more done, I turn both burners to medium and let that cook for another 15-20 minutes, flipping once to give it good color and make it a little crisp on the outside.
The longest this process has taken me is 1 hour 45 minutes. I know it's done when I can cut between the bones with a fork.
This method has NEVER disappointed me:-)

I grill all year long... I think its worse to grill in the summer when its 105 outside.. b/c you come in all sweaty.. ahha.. winter.. is just cold..

Yep its year round for me this winter its even with charcoal not just gas but the kettle grill has a peg leg so its gonna get retired soon Ive grilled @ 20 below it just takes a little longer :)
