I need advice on rubs. For the second time I have tries a rub for chicken from a very respectable cook and for the second time it burned. How can I get a rub to not burn on me?
Also, my goal this summer was to start figuring out the art of the grill. I appreciate you guys tolerating my amateur questions.

Rubs over a hot fire will burn...especially if they have a lot of sugar. If you are cooking indirect and at lower temps it shouldn't be a problem. Otherwise you have to watch it...I would go more than 5 minutes without checking on it. So lower the temp and or get the bird away from the flames and keep an eye on it, you should be good to go.
For chicken a good way to get flavor into the bird is with a soak in a brine solution.

Head Country makes an excellent rub for poultry, but like Sean says, sugar is probably your culprit.
