Hi All,
Since the weather is turning cooler and plus, it was my daughters birthday, and she loves smoked cheese, here are some pics of the cheese smoking.
I did it on my big grill and used the Oregon temperature indicator my son gave me for my birthday a couple of years ago just to make sure it didn't get too hot.
It came out great!

Nice, could you give a little instruction on what you used, I have been wanting to smoke some cheese, but was afraid of the mess. Looks like you set your temp at 100, did you use lump, charcoal, or just wood(what type). And how long did you smoke it for. And when did you flip. Any other helpful tips would be great, I love smoked cheese but its getting harder to find actual smoked cheese most of it around here seems to be cheese mixed with smoke flavoring.

I used medium and sharp cheddar cheese on my big grill. In the firebox I put 8-10 lumps of charcoal in a steel box about 1' square I made. After the coals got going, I put hickory wood on them. I prefer pecan but don't have any on my place here, just hickory. I flipped the cheese every 30 minutes and smoked it a total of 3 hrs. Four hours would have been better but the temps were starting to climb because of the heat of the middle of the day. As long as you can keep the temps under 140-150 F it's usually OK. The sharper cheese tends to melt earlier. As the weather gets cooler here I'l do more as we all love it. Plus it's time to make some deer jerky as soon as me or my son kills one, hopefully tomorrow.

my son works at Burnett Dairy Cheese in Alpha, Wisc. & brings dad cheese
when we do the smoke & grilling thing.
I'm considering the colby with bacon & the cheese with dill in it, as
well as the cheddar........ I gotta go now, the keyboard is getting
wet from the drooling ! Thanks for the time & temps. !!!
