Turkey-Ricotta Burgers

Serve these moist, flavorful burgers with classic condiments: ketchup, mustard, mayonnaise and chile sauce.

2 tablespoons olive oil
2 shallots, minced
2 cloves garlic, minced
1 1/2 lbs ground turkey
1/3 cup ricotta cheese
1 tablespoon Dijon Mustard
2 tablespoons wercestershire sauce
salt and pepper to taste
6 Kaiser rolls, split horizontally, lightly toasted
6 slices fresh tomato, preferably beefsteak
6 lettuce leaves

In a frying pan over medium heat, warm the olive oil. Add the shallots and saute until softened, about 2 minutes. Add the garlic and cook until softened, about 1 minute longer. Transfer to a bowl and add the turkey, ricotta cheese, mustard, wercestershire sauce, salt and pepper. Mic lightly and shape into 6 patties about 1 inch thick. Cover and refridgerate for about 2-3 hours.

Once cooled, preheat grill to medium high heat. Cook each side for 3-5 minutes a piece, until nicely browned and crispy. Reduce grill heat (or move to a cooler part of the grill, and cover for roughly 5 additional minutes, or until the inside of the burger reaches 160 degrees.

PLace on Kaiser rolls, dress and serve.

You will love these. I am not much of a turkey eater, but these were AWESOME!
