View Full Version : Commerical smokers, what temp ?

I was wtching BBQ with Bobby Flay last night 9/9/05 & they showed many
BBQ joints with huge smokers, some with the coal right in the bottom &
the briskets & slabs of ribs up on shelves like a big refrig.
My question is, what temp. do these hold at ??? It doesn't look very hot
and nobody flinches when they open. Just slow and low as they say.
I found by adding just a small pan of coals to my pit base I can really
shoot the temp. up at the beginning, then let them die out & just use
the side fire box, works great !

Duke,

I believe you'll find most of those pits are cookin' around 220. Some run 'em a bit hotter, some a bit cooler, but 200 - 240 is good.

Now when you're doin' chicken, you'll want it a bit hotter to crisp up the skin a bit. Lower temps give you rubbery skin.

I grilled 3 flavor chicken wings for the family tonight on the regular Brinkman charcoal
grill, Teriyaki, orange juice & onion, & the favorite Honey BBQ
60 wings, 20 minutes later, 0 wings, must be doin something right.
