Here are the pics of my homemade smoker, built under the
hands of my welding friends to my dreams..
Cook area is 48 x 18 x 12 & fire box is 18 x 12 x12, the pan below
the cook area is 48 x 18 x 6 so if I needed to, I could add pans of
coals here too if I have an army show up. Simple features with a
48 x 15 table in front make this very user friendly ! At any rate,
it really smokes the food inside ! Mounted on a simple Northern Tools
trailer. Overall cost was $1,150. Now the practice & learning begin....

Update-
Celebrated a double birthday / paintball party. After the paintball games,
feed a good helping of country style ribs & chicken wings to the extended
family of 13 and was great ! 7 hours of s l o w cook of the ribs & 2 for the
wings, all slathered in BBQ sauce with a cole slaw & homemade rolls.
Still working to tune this to my needs, does anybody use powered draft blowers to
"boost" the fire box from time to time like at start-up ???

I don't use a blower. No need to with my little smoker. I did have a BBQ Guru, but sold it to someone to needed it.

Where I am having problem is after opening up to add the second meet,
or spray apple cider on the meat, or adding lots of coals to the fire box, I
loose temp and have trouble getting it back to 250, it holds great, starts out
great when empty, it's during the work cycle it when I drop temp and just need a
manual boost to regain the higher temp. quickly. For real slow cook it's not a
problem, but sometimes I'm pushed to a timeline.

HAMS WENT WELL !
I did 62 lbs. of ham for the fire dept. yesterday, but I started out with a small
cast iron fireplace log holder of coals in the bottom of the pit.....
After 5 hours of the hams cooking in a bath of apple cider 1 inch deep we removed
them & moved the smoker to the meeting place, then we put the hams back on & only
using the side fire box (hams were up to 153') we did another 3 hours and did a glaze
of maple syrup, brown sugar & just a hint of cloves & mustard powder, we also basted
with the apple cider & glaze juices. The result was GREAT ! These guys are firemen
and can be a tough crowd, but they loved the ham, grilled baked potatoes & slow
cooked beans my son (firefighter Todd) made. (Ham was pre cooked type, 21 lbs ea.)
