I like to do chicken butterflied (or spatchcocked to be precise) or just halves. I had an old set of kitchen shears that did ok, but I recently bought a new pair of Messermeister kitchen shears that make this PITA a snap! Just snip up both sides of the backbone like cutting through a sheet of paper.
