built in vs portable

I am trying to buy my husband a new grill for father's day. He wants to build a BBQ island with a sink and fridge, the whole works. The built in grills all seem to be in the $2000.00 range, which is above what I was hoping to spend. Can you use a portable grill in an island? Can he just build a space to slide it into? I hope you can help me with this. :p
