Hello Everyone

My cousin is just finishing his first overnight cook and i was wondering how to save the meat for later? Thers only 3 of us to eat it and it was around 6lbs at the start so theres likely to be a lot left over.We don't have a food saver so any other ideas would be appreciated.

Get a foodsaver. Especially for pork butt. When you foodsaver pork butt, you can reheat by tossing the bag into boiling water. Tastes just like it did when first pulled.

You could use a regular freezer ziplock for now. Squeeze all the air out you can. Don't leave it for more than a week though. And don't try to reheat by boiling.

I'm trying to talk him into a wsm.We'll see what happens with that.He cooked for 9hrs on a ecb and then finished it off in the oven.It came out pretty doggone good. I'm starting to think you would have to try real hard to get a bad butt.When he first started he had a temp spike into the 320's before it calmed back down.He said it was a real chore to keep up with.I told him thats why I went to a wsm because it took the work out of it :D .

Only 6 pounds to start? I would think you could just refridgerate the leftovers and have them for lunch tomorrow. :p

The meat will last a week in the fridge without freezing. You can just put it in freezer zip locks and it will last a while.

I second the comments on the WSM. The cheap ECB's and Char-Broil H2O's are so frustrating to use, many people just give up trying to barbeque with them. They mistakenly blame themselves, when it's really the poor design of the smoker that's the problem.
