OK. There is a reason I call this Grilled "Cabinet" Chicken -- Because I grabbed a bunch of stuff from the cabinet and made a marinade for it.
It Turned out GREAT though.. so I'll make it again
These measurements are approximate. I just added them by sight.
3-4 Chicken Breasts
1/4 cup Olive Oil
2 tablespoons Red Wine Vinegar
1/4 medium chopped sweet onion
1 tbsp powdered garlic
1 tsp ground cumin
1 Tbsp fresh ground pepper
1 Tbsp salt
1/2 lemon squeezed for juice
2-3 sprigs of rosemary
Marinate for 30-45 minutes.
Grill as you normally would.
I also made some grilled corn. It turned out good. I brushed on some butter that I mixed with the following
8 oz melted butter
1 tbsp powdered garlic
1 tbsp italian seasoning
1 tbsp lemon juice
salt * pepper to taste
Marinating and ready to go!
