I've been given the go ahead to grill on Easter - Yeah!

I was thinking rack of lamb or something similar.
Do you guys have any good ideas/recipes?

What are your recommendations?

Sharky,

You can't go wrong with this simple/traditional one:

2 racks of lamb (8 chops each, each rack about 1-3/4 pounds)
1/4 cup plus 2 tablespoons olive oil
1 tablespoon chopped fresh rosemary
Freshly ground black pepper to taste
Vegetable oil cooking spray

DIRECTIONS
1. Trim the lamb, if necessary, and rub both sides of the rack with olive oil. Sprinkle with rosemary and pepper, rubbing them into the meatiest parts of the racks.
2. Prepare a charcoal or gas grill. Lightly spray the grill rack with vegetable oil cooking spray. The coals should be moderately hot to hot.

3. Grill the racks, meat side down, for 4 or 5 minutes, or until the temperature of the meatiest part reaches 100 F. Move the racks to the edge of the grill, away from the hottest part of the fire, and cook, covered, for 15 to 20 minutes longer, or until the temperature reaches 140 F for rare meat. Remove the racks from the grill and let them rest for five minutes before cutting between the ribs into individual chops.

Welcome to the board! I hear you are quite the grillmaster!

The recipe sounds good... It's actually very close to what I was thinking.. albeit I did not know the proper way to cook them!

Happy Easter Everyone!

I've got my ribs rubbed and will be preparing a good meal tomorrow! 90% of it will be on the grill! Keep your fingers crossed, and of course, I will take pictures!

For us everything but the apps are being prepared in the oven. I did grill a turkey tonight and even took pics. Once developed I'll share.

Were going to have some ribs tomorrow as well.. Will have to give your recipe a try and see how it turns out. I'll let you all know

My wife asked about cooking a ham on the grill, so we might have grilled ham and the ribs that are left over from yesterday.

I have done ham steaks a few times....this would be my first whole ham. I guess it would be more like baking on the grill, but I could throw a little smoke at it...that might be interesting.

My ham turned out great! Cooked it for about 3 hours (I think). I had to go by looks and estimated cooking times since it seems the probe for my thermometer has taken a dump. I am thinking the wire fell off the clip and layed on the grill or something...but I digress... I placed a tin foil pan over the middle burner and under the grate, cranked up the two outside burners to high, while the grill was heating up I scored the outside of the ham, I put the ham on and turned both burners down to low, and add some soaked wood chips. This kept the temp around 225. After about an hour and 30 minutes I brushed on some brown sugar based glaze, another coat 30 minutes later, one last coat and cranked the heat back up to high for another 15 minutes. (I will cut this back to 10 minutes next time since it got just a little too charred.)

That sounds awesome SeanB!

My Rack of Lamb simply could not have been better! I basically used the Marinade MikeW posted... I added Garlic and Salt. I cooked it until it was about 145 in the center and let it rest for about 5 minutes before cutting it. I got some great pics and will be posting them later today.


My 3 year old daughter LOVED it.. and really enjoyed eating it off the bone. lol
