View Full Version : 1st butt tommorrow

Hello Everyone

I will be starting on my first butt tommorrow. Its a 4.8lb bone in .I figured on starting it around 5am and foiling after it hits 165.Do you think its enough time to be ready for supper 5-6pm? Should I start earlier?

Oh yeah I will be using head country original with whole garlic cloves inside and foiliong with apple juice.Whadda you think?

Figure typically 2 hours per lb, but always plan for it to take longer cause it's done when it's done. Since you are foiling I think you have plenty of time. Let it rest wrapped in foil and a heavy towel in a preheated cooler for at least an hour or two. It will help redistribute the juices of the meat. It will still be too hot to touch after several hours. So that is a way to hold it if it happens to finish really fast. Good luck and let us know how it turns out.

If you're gonna foil after 165, I'd think hard about that apple juice. The butt is gonna be plenty juicy at 165 and foiling will keep those juices in just fine.

What you might accomplish with the apple juice is to mess with the bark...

Anyway, when you take it off to let it rest at the end, flip the meat upside down from the way you cooked it, and give it another layer of foil. That way the juices on the bottom will distribute more evenly.

Thanks for the heads up on the foiling. I may not foil we'll have to see how the cook turns out.At least I get to try my new wsm and et73 :D . Its 6:20 and i just put the rub on for the overnight soak session.I hope this helps as I've only usually put the rub on a few hours before just because i normally do ribs.

Petes right about the apple juice, I didn't see that part before. I personally do not foil to begin with, but it's your call if that's what you choose to do. There's nothing wrong with it at all, I just prefer not to.

well the majority rules and i've decided against the apple juice .As far as the foiling goes it will totally be a time issue. I would like to not foil if I can.I'll let you know how it goes.
