I just got home with a 13.5lb brisket that's going on the smoker in the morning along with some sausages for snacking on throughout the brisket cook. What's everyone else cooking?

Was gonna do ribs tomorrow morning but the weather is kinda tellin' me I should wait for another day...

I am cooking 15 ribeyes for the in-laws tonight along with some twice baked potatoes. Of course I have some venison for the cook to snack on. :) It's not supposed to make it out of the 20's today so it is going to be great weather to grill.

I marinaded some yardbird leg quarters in Wishbone Italian yesterday and then put them on the WSM in grilling configuration (charcoal ring on bottom cooking grate) along with some fresh bratwurst...
Yum, Yum...
I really like grilling on the WSM in this configuration. It puts the coals about 8 inches from the cooking grate and the air flow control of the WSM makes keeping an even temperature very easy.
I took the advice of Keri C. from the TVWB forum who suggested popping the joint between the leg and the thigh when doing leg quarters. Worked great, totally eliminating that "pinkish" tinge around the joint without overcooking the rest of the meat.
Hey Bill... that new porcelain grate works great (grate? :) ) Tried yours yet?

Here's some pics of the brisket I did yesterday, the first brisket of 2005. 13.5lb Full brisket, cooked using the MM and hickory chunks. Took about 14 hours @ 225 to get internal temp of 180*. Foiled and let rest for 2 hours. Added some sausages towards the end of the cook. If you haven't ever had sausages cooked on a smoker, make it a priority for your next cook! They turned out awesome!

Not yet, Tom. Was gonna do it today but last nights forecast for today was pretty bleak. LOL!! They were wrong ~ it's beautiful today..Well, it could be a little sunnier. :mad: Soon though, and thanks again. :cool:
