I discovered a recipe similar to this earlier this year. I have altered it to perfect the flavors, of course!
Grilled Potato Wedges & Sharky's Potato Sauce!
Ingredients:
3lbs Idaho Potatos
French Fry Seasoning (your favorite, I prefer Cajun)
1 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped green onions
2 tbsp creamy horseradish sauce
2 tbsp wercestershire sauce
Wedges:
1) Bring potatos to boil on the stove. Cook until fork tender.
2) Allow to cool
3) Once cooled, cut into quarters (lengthwise)
4) lay each 1/4 on cookie sheet, skin down, and brush each side with olive oil.
5) cover generously with your favorite fry seasoning.
6) place wedge side down on med-high grill and rotate 60 degrees after 2 minutes to get a nice grill mark
7) flip to other side of wedge and repeat step 6.
8) allow to cool slightly before eating (Unless you don't mind burning the roof of your mouth!)
Sharky's Potato Sauce:
Combine Sourcream, mayonnaise, green onions, wercestershire and horseradish sauce in a bowl. Mix until well combined. Store in fridge until ready to eat.
*NOTE* - You may substitute Plain Yogurt in place of Sour cream for you health contious folks! The taste is still great!
