Tomorrow I will throw on a few steaks, maybe some grilled potato wedges, asparigus and some corn on the cob.

It's one of my favorite meals, albeit not too creative!

Grilled Korean Beef on Sunday, maybe the potato wedges as well (I know, not really Korean, but hey...)

The only thing in the freezer was Pork Chops...we need to get to the store. Probably have some chicken tomorrow, unless I see something else good at the store. ;)

I didn't get around to grilling tonight. I ended up eating out, as the wife and kid were hungry!

Tomorrow I plan on finishing these steaks off for dinner and maybe trying some cuban hamburgers for lunch. I saw the recipe on Bobby Flay's Bow Meets Grill. It looked awesome!

OK. Tonight I dind't get around to the steak in the fridge. However, I did break out the rotisserie for the VERY FIRST TIME and hooked up some baby backs!

Those ribs look awesome!!!! I never thought of rotissing ribs.......

This past weekend was shrimp scampi, swordfish, ribeye and t-bone.

The ribs turned out great! I just used a rib rub I bought at the store, and finished them off with a little bulls eye BBQ sauce.

I didn't have time to let them sit overnight, so I had to use the sauce! Normally they don't need it.

These took less than an hour to cook. I think next time I'll put the temp on low and let them cook for a few hours.

I tried a pizza the other day, worked great...and tasted so much better than being cooked in the oven.

Hey Sharky, did you ever try those cuban burgers? I did, and thought they were great! I used my cast iron skillet to flatten them. Even my wife liked them, and she's about as plain jane as they come.

OK, the weekend is coming and I'mm trying to decide what to throw on the grill tomorrow. Any recommendations?

I'm thinking of turning a cheap piece of meat into a culinary masterpiece.... how? I don't know.

I got a couple of Pork Butts at Winn Dixie yesterday (.77 / lb) and figured I'd slice them in half and cure them with some Buckboard Bacon Cure and make some bacon. That won't be ready to smoke until next Sunday, so for this weekend I've got a nice 5.5 lb chuck roast that I'm gonna slow cook for about 15 hours after I rub it with some Texas BBQ rub.

If all goes well, I'll have some yummy shredded beef... If not, I'll call Dominoes :)

I was planing to smoke some pork, but we are going to the mall tomorrow to see Alton Brown and Sunday we have plans to go to Epcot, so I am going to put the pork off till next weekend. I figure I will just do some chicken. Maybe something "slow" cooked to test out my indirect setup for the Egg.

I think we are heading over to Fort Desoto Park on Sunday and will break out the grill! It'll be a good chance to use my tailgating equipment in the offseason!

He might be in Tampa on Saturday. I was looking at the site for the sponsor and they listed Tampa on the 25, but I did not look into it anymore to see where or who would be there. It's www.oster.com I think?

Either way, I'll fire up the grill on the weekend and have some good food!

OK.. I haven't decided the marinade/rub yet, but I've decided that I'm going to cook chicken, actually chicken thighs and legs, this weekend.

Chicken legs for the kids and the thighs for the adults. I'll also probably throw in some fresh salsa, maybe some corn salad, potato salad, among other things.

Well, I changed my mind... I put the bacon cure on only one of the butts I got yesterday. It went in the fridge in a Ziplock for 10 days. The other butt got a good dusting with Zach's BBQ rub and it's in a ziplock too. I'll toss it on the smoker with that chuck roast around 8 this evening. The pork should be done around 8 Sunday morning and the beef around noon. Mmmmm... pulled pork and shredded beef.

Sounds Good StPeteBBQ!

Last night I started my chicken's as well.

2 different marinades, not sure how either of them will come out.

1) Pena Colada Chicken
coconut milk
grated coconut
crushed pineapple

2) Spicy orange chicken
olive oil
orange juice
sliced jalapeno
Salt & Pepper


I also prepped all my other food for Todays grilling activities!

Mixed veggies will go in a foil pouch with a little water and butter to hopefully come out steamed to perfection. I also chopped and peeled some apples, which I hear good with walnuts, brown sugar and butter. Just toss it in a foil pouch and throw on the grill for a nice dessert!

I added a 1/2 of a large green pepper to it and it turned out even better!

Chicken sounds good, Sharky... According to UPS my grill will be here tomorrow... Chicken will be first. Do you ever brine your chickens? Makes a world of difference. I have a recipe for apple juice brine that makes chickens and turkeys taste wonderful...

I put my chuck roast and butt on last night about 7:15. Took the smoker up to about 225 and got it stabilized. Got up at 6 AM and the butt was up to 175, so I took it off the grate, sprayed it with apple juice, foiled it and up it back in the cooker. When it got to 205, I pulled it, wrapped it in more foil and towels and stuck it in a dry cooler. The chuck was at 180 then, so I foiled the chuck, put 1/4 cup of beef bouillon and left it on until it hit 205. Then I wrapped it like the butt and it's in the cooler too. In a couple of hours I'll shred the beef and pull the pork.

I snuck a taste of each and they are both wonderful. I love it when it turns out good!

Good old hot dogs tonight. If you think that is nothing go without them for six weeks and then have one. Man they were awesome. :)

UPDATE:

Pena Colada Chicken was great! I'll have it many times again!
I'll use less Olive oil in the orange chicken, the taste wasn't strong enough. perhaps marinading longer.

The apples were horrible. The wind was kicking up at Fort Desoto so I couldn't keep the flames lit on the Gas grill (coleman grill2go). I don't think they actually cooked long enough. Next time I make these, I'll try em at home.

The Pena Colada Chicken was great! I ate so much I didn't want to move.. Thanks for the great time & great food!
