Here it goes again. I think I am finally on to something I like. It has the sweetness I like without being too sweet. It also actually tastes like BBQ sauce, too...lol. The little bite in this one is very nice after the sweet/tart experience.
It's easy. Give it a try and tell me your opinion.
SnaPBBQ’s Sch’weet Sch’BANG! BBQ Sauce
(Lite Bite version)
10-02-04
(This recipe is a variation of the Dr. Pepper BBQ Sauce in Steve Raichlen’s BBQ USA.)
2 lemons
1 clove garlic, crushed
1 half inch thick onion slice
2 c Dr. Pepper
1 ½ c ketchup
¼ c Worcestershire sauce
¼ c A1 Steak Sauce
1 ½ T. Louisiana Hot Sauce
2 T. apple cider vinegar
2 tsp liquid smoke
1 tsp fresh ground black pepper
Hickory salt to taste
4 T honey
¼ c corn syrup, dark
¼ c brown sugar, dark
Cut one lemon in half and then cut a ¼ - ½ inch slice from one half. Squeeze the remaining lemon(s) juice into a 3 quart boiler. Put lemon slice, garlic, onion slice, Dr. Pepper, ketchup, Worcestershire, A1, hot sauce, vinegar, liquid smoke, and black pepper into the boiler. Bring to a rolling boil and simmer uncovered for 15 minutes. Remove from heat and let sit for 15 minutes. Strain sauce into another bowl/pot and add hickory salt to taste. Last, add honey, corn syrup and brown sugar. Stir until sugar has dissolved. Leave it alone for 24 hours, then taste it. Ooo, wee….that’s some good stuff!!
For FATZ’ Lip Gripper (HOT!!) version, use 3 T. Louisiana Hot Sauce instead of 1 ½ T. and add 2 tsp cayenne pepper during boil.
