You need:
Bag of your favorite fully-cooked, breaded popcorn chicken
Your favorite seasonings
Your favorite dipping sauce.

It is better to buy un-seasoned popcorn chicken for this, but seasoned is OK. Just remember to not over season the treat.

Place frozen popcorn chicken in one layer on large flat cooking sheet. Sprinkle you favorite seasoning over the chicken.

Place on smoker at 250-265 for approx 45 mins to 1 hour or until desired crispyness is reached.

Serve with your favorite dipping sauce for a super appetizer.

That is absolutely all there is to it.

Are you buying the popcorn chicken from the store or from KFC?

I never thought of using the smoke to flavor already cooked foods.

Frozen, store bought popcorn chicken. I let them thaw about 20-30 minutes on the counter before pittin' 'em.
