So I am going over to a friends house tonight. We'll be drinking beer, playing pool and chowing down on his ribs!
He likes to start them off in the oven for 3 hours and finishe them off on the grill. My dad used to do that, and as far as I can remember, they tasted pretty good.
I am always open to new experiences, and I want to see what he's got! My guess is they will be fall off the bone tender since her will have them covered for the full 3 hours. I'm not sure what seasonings will be used... for once, I will only be a spectator!

Big ol' brisket for me this weekend... I got a 15 lb'er, bigger than I wanted but it was take it or leave it. I'll probably separate the flat from the point and throw the point in the freezer for another day.
Gonna put the brisket on my bottom grate with a couple of pork butts on the top dripping that wonderful rendered pork fat on it. Yum Yum!

rib eyes tonight
ribs and chicken tomorrow
I bought a brisket, a slab o' pork spares, ten lbs of chicken leg 1/4s, a big ass salmon filet, thick center cut pork chops, some sirloins and a pork butt yesterday. I cooked the brisket and the steaks last night. My wife says I can't cook it all up. It needs to last two weeks.
Ummm...how the heck do you horde these things for two weeks? I'll be lucky to make it til Wednesday.

Ok. The ribyes came out great last night. Simply sprinkled them with salt, pepper, onion powder and garlic powder. Cooked over briquets w/ chunks of hickory added. The flavor was very good. Served w/ baked potatoes and salad.
In the fridge for todays cooking are:
ribs rubbed w/onion powder, garlic powder, cayenne pepper, black pepper, white pepper, paprika & brown sugar
chicken thighs marinating in italian dressing
ABT's (recipe from this site) made w/hot cherry peppers freshly picked from my garden
I will fire up the smoker around noon, put the ribs on at 1, chicken on at 2:30, and ABT's on at 5. will be served w/macaroni salad, baked beans & corn on the cob.Dinner around 7.
I'm going to marinade some a 5lb slab of spares tonight and cook tomorrow if I can hold out that long.

I must say, I was impressed with the ribs that were first cooked in the oven. He surprised me a bit, instead of sticking a bunch of ribs in a pan and baking them, he individually wrapped each one in foil and put a teaspoon of sauce in there with them. He baked them on 350 for about 3 hours. once done, he took the ribs out and placed them on a platter (falling off the bone) and then threw them on the grill for about 10 minutes (coating with sauce to get a nice color).
He calls them fork and knife ribs.... his wife and daughters don't like to pick up the bones, so it works well for him.
He also showed me a new way to butter corn... take a piece of bread and coat with butter on one side... hold it in your palm and wrap it around the corn. twisting the corn a few times. it coats your corn without burning your hand!

Another way to butter corn is to use spray butter. We use the "I can't believe it's not butter" and it works and tastes great.
Word of caution on cooking ribs the way your friend did. Wrap them real tight and put a drip pan underneath otherwise you could have a real messy oven.

My wife's family showed me that trick one time I ate at their house while we were dating - pretty cool. A couple years ago her sister brought us something form pampered chef or somewhere that butters corn (in times when there's no bread in the house) it's plastic, put a piece of the stick in there and rub away - pretty handy.

Do you guys know about the "butter boats?" You just put a few squares of butter in there and then roll roll the corn around. Menace, we are probably thinking of the same thing ......

That's how I always did it when growing up. I guess everyone has their own ways!
