My Salsa Recipe? (err.. that would be Ryan's salsa recipe with my changes :) )

I'm not too good at measuring things out, but here goes:

1 (16 oz) can of whole peeled tomato
4 average sized roma tomato diced
1/2 cup chopped green onions
1/2 cup chopped red (or sweet) onions
1 whole jalapeno finely chopped & seeded
1/2 cup chopped cilantro
3 tbsp chopped garlic
1tbsp salt
1 tbsp pepper
1/4 cup fresh lime juice


combine all into a food processor or blender and blend together until it reaches desired consistancy.

You can try adding tomato paste, lemon juice, green pepper, red pepper or just about any veggie you can think of to play with the taste.

This weekend I am going to try grilling the tomatos... I saw an episode of Bobby Flay where he grilled 1/2'd roma tomatoes..

I'm gonna have to try that salsa out. My friend back in new orleans makes awesome salsa...tons of cilantro.

It's pretty good! Ryan hooked it up for the super bowl. I couldn't put it down!

Grilled tomatos tasted great!

I added some olive oil and then red and green peppers for a little color and flavor. I have to say, they are now a regular in my salsa making!

I forgot to mention... I'm no longer using the canned tomatos, they are all fresh. I have switched to tomatos on the vine instead of roma's. They just taste a little more fresh!
