SnaPBBQ.com's Sch'moked BBQ Beans (revised 08-21-04)

2-3 15oz. cans favorite Pork & Beans
2 c chopped, smoked beef brisket
½ c diced white onion
½ c diced green pepper (optional)
1½ c favorite BBQ sauce
¼ c Jim Beam Kentucky Straight Bourbon Whiskey
juice from 1 whole lemon
1 Tbs yellow mustard
½ Tbs worcestershire sauce
½ c brown sugar
8-10 strips uncooked bacon strips
4-5 dashes Louisiana Hot Sauce (optional)

Preheat oven to 350.
In a large oven safe cooking dish, combine diced onions and beef. Add drained beans. (For soupier mixture, do not drain beans.)
In another bowl, combine BBQ sauce, whiskey, lemon juice, mustard and Worcestershire sauce. Mix well with spoon/fork.
Add BBQ mixture to cooking dish with beef, onions and beans. Stir together until all meat, onions and beans are covered with sauce.
Add brown sugar. Stir until all brown sugar has dissolved. Mixture will be thick and will thin during cooking.
Completely cover top of beans with uncooked bacon slices.
Cook uncovered for the first 15-30 minutes or until the mixture is beginning to boil. Bacon should be beginning to brown at the edges. Cover and continue to cook at 350 until bacon is done.
Remove from oven and cool for 1 hour. Dash with real Louisiana hot sauce.

Total time = Approx. 60 minutes.
Prep time = Approx. 15 minutes.
Cook time = Approx. 45 minutes.

Sounds like a great recipe Fatz!

My wife recently made some baked beans of her own by adding to the store bought version -- it came out great! I sent her this recipe to give her some more ideas to kick it up a little more!

I have revise dthe above recipe by using smoked beef brisket instead of ground beef. It adds SOOOOO much more goodness to this recipe. Just chop off a little from your next brisket, wrap in plastic, foil and a good heavy duty Ziploc freezer bag and freeze until you make beans.

TIP: When thawing, chop while still a little stiff for easier chopping.

nice switch up. I do a lot of that in every day cooking. for instance... beef stroganoff I used left over steak instead of browning cheap steak in the skillet. it works wonders!
