I am planning a party for 40 people on Friday. How much in advance can I grill bratwurst and still have the fresh grilled taste if I store it in the refrigerator? Usually, we just grill and eat. I am having a surprise birthday party for my husband, so I don't have time to make it before everyone comes over to the house. I was thinking of precooking it in beer, water and onions before grilling, and then putting the bratwurst in a nesco until my guests arrive.
Does anyone have any suggestions for someone who is limited the day of a party?

Hi Majeots! Welcome to the board!
You should be safe cooking them a day ahead of time.
I would add some butter, salt and pepper to your Brat bath and lose the water when initially cooking. You get a stronger beer flavor IMO.
I have done it both ways.. cook on the grill for roughly 30-45 minutes, and then toss them in the beer bath to simmer for up to an hour or so to infuse the flavor. Or go with the bath first, simmered slow for 2-3 hours and then finished off on the grill for the fresh flame flavor.
You can let them cool, then put into a freezer bag and store in the fridge overnight. I assume you are referring to the nesco convection oven.
You should be just fine reheating them in there. You would get them nice and crisp on the outsides which will give them the fresh off the grill crunch!

Putting your Brats in the "Brat Hot Tub" (beer, butter, onions) after you grill them will keep them nice and fresh and keep them from shrivelling up like... well you know...
Anyway, they'll stay nice and fresh for quite a while this way.

or you can always cook them 70% ... refridgerate them overnight.. and then finish them the next day... willl cut lots of cooking time.. but give the feel you did it all that day.. but with much less time.. meat fresh off the fire is always better.. imho

I'm reincarnating this old thread because I'm planning on doing some brats on Monday for a group of 15-20.
Here is my plan...please offer suggestions....
Prepare Weber grill with 1/2 coals on one side. Throw approx. 25 brats in a foil pan, cover with beer (what kind?), a sliced onion and a stick of butter.
Put foil pan over coals, bring to simmer and cook for an hour. Move pan to cool section, pull brats and put over coals for 20 minutes or so. Once almost cooked through, put back in bath to finish.
Am I missing anything? Any suggestions on beer would be appreciated.

You know, I've used heinekin with great results, then again that is my favorite;-)
It sounds like your plan is perfect. Try chopping some onions up in there as well..

oops.. I meant green/red/yellow peppers. geez it's a long day.. but I've got my beer in hand and my beer can chicken on the grill;-)

Been making beer brats for the past 3 weeks or so. I have used Heinekin and Guiness as my beer bath. Cut up a Vidalia sweet onion and then cut up some orange and yellow cooking peppers to add into the mix. I usually simmer the brats for 20/25 minutes then put on the grill over medium heat, turning every so often until golden brown. Don`t wanna overcook or break the casing as all of the flavor will drizzle out. Whatever brats are not consumed I put back in the beer bath.
