I've made a few of my own sauces, but I'm still searching for THE sauce.

Any ideas or recommendations?

You can d/l all the recipes on that site in .txt format. There is a link at the top of each page that allows you to d/l all the recipes on that page.

The guy who maintains that site is in Athens, Greece.

sauce is for those whose meat is unflavorful and dry...

do you put "sauce" on your filet mignon at Ruth's Chris ;)

I like to make salsas.. that add texture.. and complement or bring out the bbq flavor.. vs mask the taste of the meat..

i don't ever measure. and nothing ever tastes the same.. so use your imagination...

mango chutney (can find in the store)
ripe papaya
ripe avacado
cilantro
shredded coconut
pecans or walnuts
sweet yellow or red bell pepper
sweet red or vidalia onion

chop all into equal sizes.. toss together...
add sugar, cinnamon or allspice, salt, pepper, lime juice.. to taste
for added zing add one chopped fresh jalapeno...

let sit in fridge for at least 30 min

of course anything else can be added or subtracted to taste... :)

Sounds good.

Have you thought about grilling the veggies, then combining it? Maybe reduce some balsamic vinegar and use that as a glaze for the veggies:-)

ah nice touch.. but I prefer my salsas "cold" and and with a bit more texture..

BUT..

I do love roasting veggies on the grill.. I have a special veggie basket that I roast bell peppers to serve with my grilled salmon :)

I make a nice salsa. I find that roasting the veggies on the grill for even a little bit adds an all new flavor. You can still chill it once it is mixed!

oh I forgot a couple of things in that fruit salsa..

mango
garlic chopped

this fruit salsa is a great light side garnish for grilled salmon, chicken, pork.. and other fish :)
