Hey guys !
The new Cookshack Elite 025 came to the frozen north just in time !
I did a seasoning using older fatty meat and hickory wood.

Next day I did a chicken in a beer can holder, 3 hours, so it got smoke inside as well, finished in oven at 250 for an hour to make skin crispy.

Then I did some 1-1/2" thick boneless pork chops, smoked 2 hours, which I finished on the grill at 4 min. each side with some good sauce.

Both were very moist inside, great tasting ! As you can see, we still have snow & cold here. Nice not having to add coals and worry about temp. holding with weather changes. I still have a lot of "practice" cooks to do. Looking forward to beef brisket !

Glad you got your Cookshack, Duke. Hope you're happy with it.

The really good news is you got the upgraded cooker. The Smokette I have has been upgraded to a larger unit. It only has 2 shelves, but they are much larger and you can do entire racks of ribs without cutting them.

I'm jealous. :)

Looks like this forum is just about dead. Sharky refuses to answer e-Mails and nobody posts anymore.

I find this forum very useful and hope it stays up !
It is kinda the "dead time" of the year anyway, paying Xmas bills, taxes due, cold, etc.
Maybe when it warms up a bit and hopefully the economy does too, it will liven up again.
Cooking, smoking, grilling at home is CHEAPER than going out ! Also a great time to visit
with friends & family waiting for the food to get done....
