Hope you all had a great holiday season. Just a couple of picts. here to show how I do the glazed ham & apple. About a 20 lb. ham Started over charcoal & wood in the smoker, but finished inside as it was getting colder and the wind was coming up. Slow cooked for 6 hours, drained juices & fat, last 2 hours I deep sliced it, pushed in apple wedges and added maple glaze and basted every half hour until dinner.
Better if back over charcoal & wood but it was too cold outside, it tasted fantastic !
Glaze is 1 cup maple syrup, 1 cup brown sugar, 1 tablespoon powdered mustard & 1 tablespoon powdered clove. I heat it and mix it well before pouring over ham. Apple is a Braeburn, however any good quality baking apple will work.
As you serve, dip slices in juice as it gives it even more great taste !
