View Full Version : Grilling cheap meat?

When I was younger, I would go buy the largest and cheapest steak I could find, throw it on the grill & top with Heinz 57.

Now, I have seen the light. No more Steak Sauce, and no more cheap steaks.


However, I'm wondering if you guys have any tips for grilling a cheap sirloin or another cheap steak?

Can't help you with the steak issue, but can help with the cheap part. :)

I read something on the KCBS web page about cooking pork butts low and slow on the kettle. www.kcbs.us - it's on the front page "butts in a bag".

Pork Butt is $.77/lb on sale at WinnDixie about once a month. Pork shoulder picnics can be done the same way as a butt, and they were on sale last weekend at Albertson's for $.67/lb. Now you'll lose about 30% - 40% during cooking so take that into account.

And what you can do with a pork butt, you should also be able to do with a chuck roast. Chuck roast is always on sale somewhere.

Now if we were in Texas we could get all the briskets we wanted for those same prices, but here they want $4.00/lb for one.

One of the beauties of cookin' low n' slow is that it is geared toward the cheaper cuts of meat. Now, you mentioned once before that you're one of those "instant gratification" people. This definitely ain't that. Low n' Slow is for drinkin' beer and telling lies while cooker does it's magic ;)

Yeah, I am an instant gratification kind of guy.

The wife doesn't liked smoked foods that much (GASP!), so grilling is an only option for me!

OK. I'm grilling up some strip steak tomorrow.

I'm going to see what I can do to dress it up. It's a tough piece of meat, so I am going to marinade it for an hour or so in some sort of concoction an hour or so early. any suggestions?

Saw Emeril this weekend and he was actually talking about the cheaper cuts of meat.

As he said, you just have to give them a bit more love!

They all need to be marinated for 12-24 hours to give them nice flavor.

I'm pretty sure any of your favorite marnates would work though!

It's an acquired taste but I've used Italian salad dressing for an overnight marinade with tougher cuts of meat
Not excellent but something a little different
You can mix it herbs of your choice
Maybe top with a marinara sauce and mozzarella cheese for the last few minutes

Marinara and mozzerella on beef sounds interesting. I haven't tried that before. It's worth a try at least!

One thing my girlfriend is really into is sprinkling crumbled bleu cheese on steak (she got a steak in a restaurant that way one time and has been nuts about it ever since). I hate bleu cheese but it works for her, so... :p

My dad made a 69 cents a pound brisket last night, it was terrible.

Friday night we bought some filets from central market, $25 a pound. Talk about good....

You will find that Fillet's aren't the best tasting steak on the grill. Try a ribeye and you will love it!

although it's not as good for your figure!

We used these filets for fondue, with lobster tails and shrimp.

I haven't been able to do good fondue at the house. I think I prefer to slap the meat on the grill and cook it the way God intended it.. directly over fire!

I've always heard that soaking a tough cut for an hour in plain ol' Coca-Cola will help loosen it up a bit before marinating. I'd have tried that but the wife knows her steaks and prefers choice cuts. Oh well, how can you complain about that?

So you are saying soak in coke, BEFORE marinating in something else?

That's what I'm saying. The ol' boy that used to do that says it "sweetens the meat" before the other seasonings do their thing. Hell, if it's truly cheap, it can't hurt, huh?
