Some of you may be familiar with this product. Basically what it does is extends the WSM about 1 foot taller with an extra cooking grate.

These are made by an English company and haven't been available here in the US until just recently. In fact the first ones just shipped from the US distribution center this week.

There doesn't seem to be much to go wrong with it. The grate is a bit beefier than the WSM grate. It also has handles on the side and a swing-out access door.

I'll report back on my results after I've had a chance to use it. With the extra room this gives the WSM you should be able to cook 6 butts or 3 whole briskets at one time.

WSM Stacker arrived today...

All in all I'm pretty happy with it. Haven't used it yet, but what's not going to work? I am curious to see if the burn times remain as good with the stacker in place and if the heat stays as consistant between the top and bottom grates. With just two grates in the stock WSM my temps were about 15 degrees hotter on the upper grate.

I'm a traditionalist with the WSM. I pretty much always cook with water in the pan. I've tried sand, clay pots, Piedmont pans... nothing works for me as good as water in the pan. I do use the Brinkman charcoal pan for it's extra capacity though. And if I need extra heat, I'll just use an empty foiled pan or no pan at all. Especially good for chicken.

Yeah... I'm getting the place in shape... put in a fence around the back yard, put in some sod, landscaping all around, etc... It's a job for sure.

Just let me know when you're headed this way... I'll fire up the smoker and ice down the beer... :)
