Helloooo everyone!!! I just registered a few minutes ago and I am ready to start cookin'. I was talking with a fellow co-worker yesterday and we were talking about ribs. He mentioned his son in law marinated them in vinegar first then grilled them. I didn't follow up on why he did that, but here is my question--Why the heck would you marinate them in vinegar? That doesn't seem right to me. Maybe I am wrong. Anyone have any comments, i would love to read them. thanks!

Maybe he is trying to tenderize the rib meat with the vinegar. Vinegar also adds a tart flavor to meat when used as a marinade. Dont marinade for to long because the vinegar can take over the meats flavor. It doesnt sound too bad actually, just ask anyone from North Carolina, vinegar was meant to be with quality pork products.

My guess is he marinated the meat with a cider vinegar based marinade? I wouldn't imagine he marinated them in ONLY vinegar.
Either way he is probably trying to tenderize the meat and is cooking them over direct heat on the grill for a shorter period of time (an hour or 2) instead of smoking them low and slow.

hmm.. dunno if I would wreck the flavor of the ribs with vinager... slow indirect cooking will give you much better results if you are looking for "tender" ribs...
i always get great results using a "rib rack" by weber.. found at home depot.. be sure to remove the thin membrane on the underside of the ribs.. this is the crap that gets stuck in your teeth.. and it also allows your spices to absorb better.
I always use a dry rub.. with equal parts sugars (brown and white), salts, and chili powders.... be creative... i've got my own secret rub ;)
then I place them in the rack and sit the rack on a cookie sheet that I keep filled with water.. to catch the drippings and also keep moisture in my grill.. I cook indirectly for 4-5 hours at 250... results are fall off the bone ribs.. that are juicy...

You do this directly on the grill Greg?
Do you have a multiple burner set up in your grill?
