This is one of my favorites and quite comon in the northwest.
Aquire some Cedar cooking planks usually found @ better grocerey stores and online @ http://www.williams-sonoma.com/srch/name.cfm?imgs=1&words=cedar+grilling+planks&bnrid=5860001&cm_ven=Google&cm_cat=Search&cm_pla=Keyword&cm_ite=cedar%20grilling%20planks
Do a google search and find others.
Soak the plank in water for about 3 hours ( I use a 5 gallon bucket )
Sprinkle the plank with olive oil
Place the fillet on the plank skin side down and set on your grill.
Keep a spray bottle handy for flare ups
I season with lemon and black pepper to keep the smoky cedar taste but you may add what you want or follow the recipies on the packages that the planks come in.
Cooking times may be longer due to the plank absorbing much of the heat I usually cook indirectly but really hot.
