Mandarin Skirt Steak

2 1-pound skirt steaks
juice and zest of 4 tangerines
1/4 cup soy sauce
2 tablespoons oil
2 tablespoons ginger, peeled and grated
4 cloves garlic, minced
2 teaspoons Tobasco

Combine all ingredients except skirt steaks. Mix well. Place steaks in a resealable bag. Pour mariande over top and refrigerate for 2 hours. Remove steaks from refrigerator and preheat grill. Grill steaks over high heat for about 3 to 5 minutes depending on thickness. Turn once during grilling. Remove steaks from grill when done and let rest for 5 minutes. Carve across the grain, 1/4 inch thick and serve.

That sounds awesome bro, I'm gonna give this a shot this fall.. pain in the ass to find good tangerines up here though.

I used oranges and it worked just fine;-)
