I'm searching for off the wall ideas.
I want to grill something different.
Pizza will come this week.
I've done chicken, steak, ribs, beef and seafood.
I want something different, that is still appetizing.
Something I can make a whole meal out of.
Any ideas?
Recipes?

If you have a cast iron dutch oven you can stick it right down in the coals and cook any number of things....grilled chili. Not that off the wall, but I am kind of tired so I am not at my most creative. ;)
Oh yeah and along with pizza, don't forget calzones.

I have a cast iron skillet and griddle, but not a dutch oven:-(
I saw a post on another board about enchiladas. That sounded really good.

Have you done a meatloaf yet?
Fire up your kettle with charcoal on two sides banked against the edges. Put a drip pan in the middle. I wouldn't use more than 15-20 briquets per side, probably more toward 15.
Make the meatloaf like you normally do, except don't put it in a loaf pan. Put in on a throw-away pizza pan like this:

Cook it to an internal temp of 160*. Gotta be careful with ground meat. Use some wood chips or a couple of chunks. I'd do a milder wood like maybe apple or pecan. Ground meat really soaks up smoke flavor, so don't overdo it.
About 40 minutes into the cook, score the top of the loaf and brush on your favorite BBQ sauce.
For a real flavor boost, cut up some sharp cheddar cheese into 1/4" cubes and mix that in with your meatloaf. Again, don't overdo it, just enough for a nice burst of flavor when you bite into it.

That sounds pretty good! I've always used ketchup on top of meatloaf!

Ketchup works, too. Ketchup is one of my two favorite vegetables. The other is french fries. :)
You mentioned your wife doesn't like BBQ sauce... try this recipe:
1/2 cup ketchup
6 TBSP dark brown sugar
2 tsp dry mustard
1/2 tsp nutmeg
Mix ingredients thoroughly. Apply to meatloaf at the halfway point during cooking.
