View Full Version : Entered my first cooking competition...

It was a chili cookoff at a festival two towns over. I love watching them on tv so I thought I would enter. I was hoping it was a cook in front of the judges competition but it was a drop off. So I drop off the chili at 9:30 am and go back to pick up my crock pot at 1:00 pm.
Heading to the building with my 12 year old I try to lesson the expectations by saying that some might not like my chili and that we shouldn't worry about it. Just then she stops in her tracks and says " daddy, that is you" pointing towards the door and low and behold there is my name as the winner of the chili cook off.
I am now an award winning chili maker.......... :D
$50 for a pot of chili works for me. :)

Well, I don't really follow a recipe, I go by taste. I start with onions, peppers & ground beef. saute that all up and then add beans, crushed tomatoes and seasonings (including a pinch of sugar). I simmer for a few hours, tasting and adding what I feel it needs. Then I cool it down and refrigerate it overnight. The next day reheat it slowly and it is ready to eat.... of course you have to keep tasting it.... :)
I am always varying the heat by the amount of hot peppers I add or even by the type of pepper..... Cayenne, jalepeno or habenero. When I can't find hot peppers I use ground cayenne and tabasco.
It's pretty simple to make. I think slow cooking it the day before makes a world of difference.

I love chili!

(But my wife doesn't like me eating it!)

When I was a kid my family went to a lot of chili cookoffs with some of my dad's coworkers and non of the chili had beans (Texas Style), I am pretty sure that was part of the rules...
