Anyone planning on a cook this weekend?

It's supposed to be nice in STL, one of the nicest weekends in a while. I'm thinking about doing some baby back ribs on Saturday, perhaps beer-can and/or spatchcocked chicken on Sunday.

For the ribs, I sometimes give them a soak in Apple Cider for 12 hours to overnight. Anyone marinate their ribs on a regular basis? Usually, I'm good with a coating of dry rub and some apple smoke...

Same question with the chicken. A butterflied chicken seems it would be perfect for overnight marination. Anyone have a good suggestion besides Wishbone Italian Dressing? ;)

Try a search on here for "marinade". I got 44 hits.

Also look in the "Marinades, Rubs & Recipes" forum for suggestions. I saw several for ribs and chicken.

Also- here is a link about the marination process: http://homecooking.about.com/od/specificdishe1/a/marinadescience.htm

Thanks Karst. I know there are plenty of marinades out there. I was just wondering if anyone had one specifically that they use. One that is battle-tested, if you will...

The local grocer had both baby backs AND my favorite beer on sale. Looks like the start of a great weekend. Is it Friday yet?

A good grilling starts with the meat for sure.

I think you will find that most of the marinades mentioned on here are based on the members experiences. A certain advantage over just finding recipes.

Be sure to post back with your meat selection, technique, and results.
