I'd like to take this time to welcome all of you to my Brand new Forum here at sharky.com. I've created this forum out of my passion for grilling! I love grilling in my backyard, I love grilling while I tailgate at Tampa Bay Buccaneers football games, I love grilling just about anywhere!
I don't claim to be the best cook, but I am good enough for my friends and family! I have a lot of recipies, techniques and stories to share, and I hope you do too!
You will be seeing many changes in the early stages of this forum. Don't be alarmed if the color changes, forum names change, etc. I'm constantly tinkering to make this the best grilling enthusiast forum on the net!
Thanks very much for stopping by!

LOL.. Keep in mind, I was away from my home habitat using only what was provided! It's tough to work your magic on an old rusty grill!
:-)
BTW - They are having a crawfish festival in Tampa, You should come down!
Don't worry Billy, now that I'm in his "home habitat" I'll let you know how it is. ;)
When is the crawfish festival? I have to make sure I'm here for that. Do they actually make them nice and spicy? The dinner we had the other night I asked for extra spicey and I could barely taste it. lol I am from New Orleans. I was very happy to find Tony Chachere's at the grocery store though.

lol Luke. I'll find out the info and let you know...
They have a lot of good food down here in Tampa, It's not all for New Orleans you know!
I can assure you one thing, grilling in Tampa is MUCH better. It's humid here, but not as humid as N.O.!
We'll have you over for dinner one night and I'll show you how it's done!

to aviod risk of being banned: my favourite barbeque food is chicken breast in a roll, with a pinch of salt, seconded by 2 sausages, well done
sharky
07-05-2004, 09:32 PM
Chicken breast in a roll? You take the cooked breast and place it in a roll like a sandwich? or do you cook the chicken breast, and then bake the bread around it?
:-)
steven
07-05-2004, 09:34 PM
cooked breast, sliced and layered into a cold roll

Just signed up. Enjoy grillling and smoking. Just finished smoking my first venison ham. turned out great.
I use a combination wood and gas smoker. Wood for flavor & gas for temp. control for those long slow smokes.
Hello everyone.

tshrmp,
talk to me about the venison ham. are you talking about a hind quarter? how did you prepare it?
Duece, I used a hind qtr. I soaked it or marinade it in a solution of my own making consisting of a teriyaki marinade with Powdered onion, garlic korean pepper, cajun spices, black pepper, ginger and added a basic salt & sugar brine with papaya juice as a tenderizer.
Smoked it about five hours with oak and maple wood at 225-250 deg. Then wrapped it in foil for two more hours. Could have taken it off earlier, but I dozed off.
It still turned out good. I took it to church and gave them a taste Even people that don't like venison liked it. tshrimp :

Sounds good. I have smoked three hind quarters so far and they just keep getting better. I will only smoke them for 4-5 hours now wrapping them in foil after 2-3 hours. This lat one I did I wrapped in a towel when it came off and put it in a cooler to rest. I took it out after 1.5 hour and when I opened the foil the bone just pulled right out. Very tender.
I still have three more to smoke until hunting season. :)

Well, nothing special with me... That's why I'm here ;~)) . . I have a 10+ year old red Weber Genesis 2000 upgraded with SS Flavorizer bars and PCI grates. Love Delmonico steaks cooked medium with just some salt, fresh cracked pepper and a little garlic powder but sometimes I'll use McCormick's Grill Mates Montreal Steak seasoning. Baked potato on the grill and corn-on-the-cob to round it out. Damn..I'm making myself hongry!! LOL

It sounds like your favorite meal is also mine. Nothing better than a ribeye, baked potato and corn on the cobb!
